Beet - Asparagus Salad

ASPARAGUS IS PLENTIFUL NOW & so great for our heart health . . .

2 Medium beets

10 Asparagus stalks, ends trimmed

1 TBSP Olive Oil

3 TBSP Pecans halves, toasted

1 Clove Garlic

2 TBSP Greek Yogurt

2 TBSP Crumbled Mediterranean FETA

1 TBSP chopped Chives

Heat oven to 450

Rub vegetables with Olive Oil & sprinkle with salt.  Roast BEETS 40 minutes and ASPARAGUS 20 minutes ~ remove from oven & chill about 15 mins.

Peel & Chop BEETS; chop ASPARAGUS.  Pound nuts and garlic to a paste & stir in yogurt.  Mix with veggies.  Top with FETA & CHIVES and   serve over your FAV greens!
