Recipe Corner

Thanks Jessica Jensen for this delicious and nutritious treat:

Oatmeal Fruit Cookies

1-1/2 cups white whole wheat flour (also called whole wheat pastry flour)

1-1/2 cups old fashioned rolled oats

1/2 t baking soda

1/2 t baking powder

1/2 t sea salt

1 T cinnamon

1/2 t nutmeg

3/4 cup unsweetened applesauce OR mashed banana

1/2 cup honey (Raw honey is best but may not be good for neutropenic patients.)

1/4 cup canola oil

1 egg

1t vanilla

1/2 cup raisins

1/2 cup chopped walnuts

Mix dry and wet ingredients separately, then combine. Be careful not to over mix. Dough will be fairly wet.

Chill dough 20-30 minutes or until it is easier to scoop.

Scoop out in 2T size. Bake 15-20 minutes at 325 degrees. Makes 24 cookies.

These cookies are a great healthy snack full of whole grains and healthy fats.

Horizon Middle School Art Project to support Classmate

In December, we sponsored a very special art project at Horizon Middle School to show community support for a fellow student who was recently diagnosed with leukemia. The results were incredible. As the saying goes, a picture is worth a thousand words.

Special thanks to Horizon Middle School staff and parents for taking a proactive approach when one of their students/friends was diagnosed with cancer.  Also a very special thanks to Sacred Heart Children's Hospital and artist in residence Sironka for leading the project.

If you would like to inquire about a similar project at your school for a student who has been diagnosed with cancer, please call our office at 509-474-2759.
