CHEF MAYRA: VEGAN ALTERNATIVES TO GELATIN
Gelatin serves both nutritional and culinary roles in nonvegetarian diets; however, a lot of vegetarians and all vegans do not consume gelatin in its many forms because it is often created out of boiled pig skins and dissolved or processed veal cartilage and bones.

This leaves vegetarians with a gap in cooking functionality when a recipe calls for a gel or thickening agent. It also leaves vegetarians with fewer options if they need a source of gelatin to increase bone and cartilage health.
If you are a vegetarian and you are looking for something to replace gelatin, do not despair as there are alternatives.

Here are some alternative options for you:

1. Use a rice starch alternative. A&B Ingredients recently developed a rice starch alternative to gelatins that mimics the cooking functionality of gelatins closely.
2. Use a soy-based alternative. Soyfoods USA developed NuSoy Gel, a gelatin alternative which was created entirely out of of soy isoflavones and contains 100% of your vitamin c recommended daily allowance.
3. Use seaweed-based alternatives. Agar-agar, for instance, is a seaweed based alternative to gelatin that can simulate the culinary functions of gelatin.
4. Increase your calcium intake. One component of gelatin supplements that allegedly increases joint health is calcium. If you want to increase your calcium intake without eating gelatin, you can simply consume more calcium-fortified foods and even take supplements.
5. Increase your vitamin c intake. Another component of gelatin supplements that allegedly increases joint health is vitamin c. You can increase your vitamin c intake by consuming more citrus fruit.
6. Increase your glucosamine intake. No foods contain glucosamine, but you can increase your intake by purchasing supplements at your local grocery store or pharmacy. This is rumored to improve joint health if taken regularly.
To reiterate - gelatin has two major functions: it works as a thickening agent for foods and is rumored to improve joint health; both of these functions can easily be mimicked by structural and nutritional alternatives.

THA UNDERGROUND MUSIC AWARDS IN BERMUDA

In the reggae category of Bermuda's Tha Underground Music Awards, Troy Anthony won best Reggae/Dancehall Artist and Slanger, who is currently incarcerated, won Best Reggae song for 'Hard Life'.

Tha Underground Awards were started as a way to promote unsigned artists. The awards are open to anyone worldwide, but the promoter, JT Talbot, tries to stick to a 60/40 rule � so 60 percent of the nominees are from the Island, in order to promote Bermudian artists.

GHANA: TOP REGGAE ARTIST LAUCHED ALBUM

One of Ghana's sensational reggae lyrical artists known in showbiz as Okumfo Kwame 1 Afrika has launched his third album in Accra. The launching brought renowned musicians both old and new and notable among them was Ghana�s Best Reggae Artist 2008 Shasha Marley, reggae lovers and some American students who had a lot of admiration for Ras Kwame.

�Okumfo� literally means the Priest; this artist has the craft stage to pull his crowds agog along with his rhythm. Ras Kwame is originally roots-rock reggae Musician/Poet sojourned in Chiicago , Illinois, USA who credits his musical upbringing to his elders and the general environment of his home base in Ghana where his root first blossomed.

The talented and easy going artist has shared stage with cr�me della cr�mes like the Third World Band, renowned poet Mutabaruka, Pato Banton, Sonny Ade, Wailing Souls, the late Sonny Okusun among others.

In an open remarks another Ghanaian musician who had a stint with Ivorian Alpha Blondy and the Solar Band, Ras Appiah Levi said reggae music of the Caribbean has found its home in Africa which could become the genres biggest marketing Africa if much attention are paid.

�Over here in Africa we really listen to reggae music and are very pleased to acknowledge it, but I do not think we appreciate the true worth and potential� he said.

Ras Appiah Levi, philanthropist who is now in chare of Prodigy International Productions Association (PIPA) challenged Governments of Africa to provide much incentive for the entire entertaining industry to boost tourism. �They do not seem to understand that music internationally is a multi-billion dollar business. Governments have not proposed any strategy towards the development of the music industry�.

He said Reggae music in Africa is a massive market but they must be aware of the piracy therefore good system must be put in place in order to make enough profit to serve the society. �Reggae music is big force and has always had the following in Africa since the 1960`s. We urge all corporate bodies not to concentrate only on sports but also pay attention to the local music and arts Industry� Ras Levi exhorted.

The new album launched was called �FORWARD EVER�, and that was the third album following �How Sweet It Is� and the �O.A.U.�

THE 2008 BRITISH VIRGIN ISLANDS FESTIVAL JULY 25 - AUGUST 9
THE 2008 British Virgin Islands Festival (Tortola, British Virgin Islands in the Caribbean) is underway and Minister of Education and Culture Andrew Fahie, other officials and committee members met recently to discuss and provide an update on the upcoming event.

The theme for this year�s Festival is �Anticipating a bright future, paying tribute to our past while celebrating our culture", while the slogan is �It�s Gonna Be Great, Let�s Celebrate and Educate � Festival 2008�.

The Festival will run from July 25 until August 9.


On July 26, the Local Calypso Show will be held while on July 27 the panorama will be staged.

The BVI Talent Explosion will be hosted on July 28, the Junior Calypso Show on July 29 and the Cultural night will take place on July 31.

The weekend of August 1-2 is described as Super Weekend where the International Reggae and Calypso Night will be combined.

RASTAS CAN USE CANNABIS, ITALIAN COURT RULES

Rastafarians have always regarded Ethiopia as the promised land, but Italy could rank a close second, after its Supreme Court ruled that smoking or possessing cannabis is not a criminal offence but a religious act when the person doing it is a Rastafarian.

Last year, the same court declared that cultivating even a single cannabis plant was a punishable offence. But now Italy's Court of Cassation has said Rastafarians use marijuana "not only as a medical but also as a meditative herb. And, as such [it is] a possible bearer of the psychophysical state to contemplation and prayer".

Release, the London-based drugs information service, said that the ruling was a European first.

The case was brought by a man in his forties from Perugia who was sentenced to 16 months in jail plus a �4,000 (�3,000) fine in 2004 for possession of 97g of marijuana. The Supreme Court said the court of first appeal had failed to consider that the man, a Rastafarian, smoked marijuana according to the precepts of his religion, which, the judges said, permits the smoking of 10g per day. Rastafarians smoke the drug, said the court, "with the memory and in the belief that the sacred plant grew on the tomb of King Solomon".

The government is livid. The judgment "shatters the laws which forbid and proscribe penal sanctions for" the use of illegal drugs, an Interior Ministry spokesman said.

Right-wing politicians were scathing. Senator Maurizio Gasparri said: "Today we learn a Rasta is free to go around with drugs. If somebody belonged to a religion which permitted them to eat their children, would they give them the go-ahead, too?"

But the verdict was received with joy at Rototom Sunsplash, Europe's biggest festival of reggae music, near Udine, in north-east Italy. "Finally the principle of religious pluralism is beginning to make headway," Filippo Giunta, president of the festival, said. "This judgment ... underlines again the difference between this substance and so-called 'hard' drugs, alcohol included."

SORAIA : : SONGS ABOUT YOU
Soraia Drummond was born in Salvador-Bahia-Brazil, nine days after her big inspirer Robert Nesta Marley passed (May, 20, 1981), she spent her early years with her mother, three brothers and one sister in a suburb town called I.A.P.I. She was inspired by Bob Marley�s way of life and actually learn to speak English just by listening to Bob Marley�s music.

She started her musical career when she was twenty years old and always loved arts at school and was an A student in arts, writing and handcraft. Her big passion is to read and believes that reading is the key to evolution. Her first contact with the guitar was when she was twelve and saw a cousin playing the classic Los Lobos version of the song �La Bamba� by William Clauson. She loved the magic of the possibility to play a lot of notes with just one touch and decided to learn to play the guitar, but her family had no musical tradition and couldn�t afford to buy her a guitar. So she learn,t some chords with friends who encouraged her to join a rock band which she did as a singer. She kept working with computers which is another of her passions and her first job, and saved enough money to buy her first guitar when she was twenty-two years of age. The next two years were spent learning to play the guitar professionally, and then she enrolled in the Federal University of Bahia where she studied and learnt classical music.

She started writing and recording her own songs and sometimes she would perform and sing them at small functions and a few nite clubs in and around Salvador. She worked in public schools as a bi-lingual teacher in English/Portuguese before being discovered by Jamaica�s international manager and tour coordinator Copeland Forbes at a Gregory Isaacs�s concert in Salvador at July 07, 2007. Forbes, who once had an all female band GIRLZTOWN invited the songstress to perform as a surprised guest artist on the show and was very impressed by her performance. He invited her to come to Jamaica for the 15th staging of Jamaica�s premier Reggae festival Reggae Sumfest and introduced her to Jamaica�s ace saxophonist and producer Dean Fraser who was very impressed with her musicianship. Fraser took her to Grafton Studios and she re-recorded the Tarrus Riley�s hit �SHE'S ROYAL� in the Portuguese language hence its called �NAO SAIA�. She�s now working on her first CD title �SONGS ABOUT YOU� and working with some of Jamaica�s top producers in the likes of Sly & Robbie, Dean Fraser, Computer Paul, Earl �Chinna� Smith and Leebert �Gibby� Morrison.

She�s also working on her Brazilian album Soraia Drummond, in this album she has a few Portuguese version of some Reggae classics, songs like Rasta man chant (Bob Marley), Night nurse (Gregory Isaacs) and, of course, She�s royal (Tarrus Riley).

Phillip Fraser : : Dancing Time
The 70s and early 80s were a time of incredible productivity for reggae artists and producers. Ska and Rock Steady had given way to the new reggae beat and there was a sound system on every corner. Djs and soundsmen scoured the islands and the USA for new music to play on massive PA systems. Version after version of popular beats were released to an audience that had an insatiable appetite for the latest cut and dub of the hottest riddim.

Singers and toasters would go from one studio to the next to check out what the musicians and producers were working on. If they liked what they heard and had a song that fit the beat it would be laid down on tape. Session after session would go like this and the top songs of the day would be sent to press. Many a good song was put on the shelf and forgotten as the next wave of beats came and the dancehall crowd moved on.

It was in this time that Jah Thomas and Phillip Fraser came together. Thomas was enjoying a demand for his beats with hits like �Entertainment� and �Gunshot� being two of his most heavily sampled. Fraser hailed from Greenwich Farm and moved with men like Prince Allah, Rod Taylor, Micheal Prophet, and producers Danny Mais and Bertram Brown while Thomas was more likely to be found in Waltham Park hanging with Junjo Lawes, Ranking Toyan, Little John, Barrington Levy, and singer/producer Linval Thompson.

This then is a collection of songs recorded in those times and except for �Dancing Time� that appears on �Roots Dancehall Party� these tracks have not been released before.

Jah Thomas is still producing his own music and is often called upon by modern artists to help with the vibes of a song or session.

Phillip Fraser is still performing on the reggae festival circuit and is equally at home singing songs of the heart or socially conscious roots music.

A man of peace and humility, a true and original Rasta in every sense of the word. If you see a flyer advertising a dance, and his name is on it, then do yourself a favor.
