CHEF MAYRA'S HEALTHY HOLIDAY EATING TIPS
|
The holiday season can be equally stressful for vegetarians and vegans, as well as those generally health-conscious, who don’t like the idea of gaining the fabled seven pounds that the average American puts on between Thanksgiving and New Year’s Day.
I’m not convinced of this statistic’s accuracy, but it’s become so emblazoned on our consciousness that just the fear of those extra pounds makes it a force to be reckoned with. Here are a few of my favorite ways to celebrate happily as well as healthfully:
1. THINK ETHNICALLY: I enjoy stepping outside of my own cultural heritage to jazz up holiday meals, whether that means making Sephardic dishes for Hanukkah, or Native American dishes for Thanksgiving. Ethnic cookery offers-quite literally-a world of options, including the use of creative seasoning and greater use of produce in the menu. 2. USE SEASONAL PRODUCE: Use an abundance of hardy fall vegetables, including a variety of squashes, pumpkins, apples, pears, sweet potatoes and other root vegetables, the cruciferous vegetables (cabbage, broccoli, cauliflower) and fresh greens. Support local agriculture by shopping for late-season crops at local farm markets. Soon, many of them will be closed until May. 3. KNOW YOUR GUESTS’ NEEDS: When planning a holiday meal, or any festive meal, I like to ask guests beforehand if they have any dietary restrictions. It’s surprising, for example, how many people can't use dairy products. Being able to accommodate everyone is gratifying, and I like everyone to leave the table happy. 4. PROVIDE FOR YOURSELF: If you're invited to a gathering where you suspect there will be limited food choices, volunteer to bring something healthy, whether an appetizer, a main dish, or a low-fat dessert. You'll ensure your own satisfaction while sharing your good food choices with others. 5. GET THE FAT OUT: Holidays are a perfect time for a bit of indulgence, but too much makes us feel awful. Don't be afraid to break with tradition. Just because your mom made a favorite dish or dessert with two sticks of butter, that doesn't mean you have to. There are many easy ways to substitute healthier ingredients for fatty ones. Some of my standbys: For creamy dips: Pureed silken tofu is a superb base. It also addresses the needs of those who can't or won’t’ use dairy products. For baking, you can substitute low-fat yogurt, soy yogurt, or applesauce for nearly all the fat in a recipe (as I've done in the baked goods, above). The results are always unbelievably moist. Cook grains and “sweat” vegetables in vegetable broth. It gives them a flavor boost that helps curb the impulse to use more fat such as butter to heighten taste. Dairy products such as cream, hard cheeses, and butter are high in saturated fats, which raise cholesterol levels. In addition, stay away from products containing hydrogenated or even partially hydrogenated fats. Move away from the notion that the richer something is, the better it tastes. Fresh and dried herbs, spices, lemon and lime juice, vegetable stock, and wine all do wonders for flavor without adding fat-or even calories, for that matter. 6. KEEP UP THE EXERCISE! This is no time to undo any good exercise habits you've (hopefully) gotten into. In fact, exercise will not only help you burn off the almost inevitable extra calories; it helps regulate the metabolism, and is a great cure for the winter doldrums. It doesn't have to be anything fancy-grab a few of your holiday guests, bundle up, and take a nice long walk! ENJOY YOUR HEALTHY, HAPPY HOLIDAYS!!!!! BAYER OR CANNABIS?
|
When Bayer introduced aspirin in 1899, cannabis was America's number one painkiller. Until marijuana prohibition began in 1937, the US Pharmacopoeia listed cannabis as the primary medicine for over 100 diseases. Cannabis was such an effective analgesic that the American Medical Association (AMA) argued against prohibition on behalf of medical progress. Since the herb is extremely potent and essentially non-toxic, the AMA considered it a potential wonder drug.
Instead, the invention of aspirin gave birth to the modern pharmaceutical industry and Americans switched away from cannabis in the name of "progress." But was it really progress? There can be no doubt that aspirin has a long history as the drug of choice for the self-treatment of migraines, arthritis, and other chronic pain. It is cheap and effective. But is it as safe as cannabis?
History: Marijuana has been used for over 5,000 years. No one has ever overdosed on marijuana. Aspirin has been used for 108 years. Approximately 500 people die every year by taking aspirin
The Law: Marijuana is a Schedule 1 drug, meaning the US government believes it is extremely dangerous, highly addictive, and of no medical value.
Aspirin is available for pennies and can be purchased by children at any drug, grocery, or convenience store. Often they are just handed out free by people with no medical education.
Marijuana side effects and dangers: The dangers of marijuana include possible respiratory problems caused by the deposition of burnt plant material on the lungs. This danger can be eliminated with alternate forms of consumption such as eating or vaporizing the medicine. For two to four hours, marijuana causes short-term memory loss, a slight reduction in reaction time, and a reduction in cognitive ability. (It makes you stupid for a little while.)These conditions DO NOT persist after the herb wears off.
Hunger, Paranoia, Depression, Laughter, Introspection, Creative Impulse, Euphoria, Tiredness, Forgetfulness
Aspirin side effects and dangers: When taken with alcohol, aspirin can cause stomach bleeding. Reye Syndrome in children: fat begins to develop around the liver and other organs of the child, eventually putting severe pressure on the brain. Death is common within a few days. People with hemophilia can die. People with hyperthyroidism suffer elevated T4 levels. Stomach problems include dyspepsia, heartburn, upset stomach, stomach ulcers with gross bleeding, and internal bleeding leading to anemia. Dizziness, ringing in the ears, hearing loss, vertigo, vision disturbances, and headaches. Heavy sweating Irreversible liver damage Inflamation and gradual destruction of the kidneys Nausea and vomiting, Abdominal pain, Lethargy, Hyperthermia, Dyspepsia: a gnawing or burning stomach pain accompanied by bloating, heartburn, nausea, vomiting and burping. Tachypnea: Abnormally fast breathing Respiratory Alkalosis: a condition where the amount of carbon dioxide found in the blood drops to a level below normal range brought on by abnormally fast breathing. Cerebral Edema: Water accumulates on the brain. Symptoms include headaches, decreased level of consciousness, loss of eyesight, hallucinations, psychotic behavior, memory loss and coma. If left untreated, it can lead to death. Hallucinations, confusion, and seizure. Prolonged bleeding after operations or post-trauma for up to 10 days after last aspirin. Aspirin can interact with some other drugs, such as diabetes medication. Aspirin changes the way the body handles these drugs and can lead to a drug overdose and death.
If you think that cannabis is actually safer than aspirin, you are not alone. In October 2000, Dr. Leslie Iversen of the Oxford University Department of Pharmacology said the same thing.
In her book, 'The Science of Marijuana,' Dr. Iversen presents the scientific evidence that cannabis is, by-and-large, a safe drug. Dr. Iversen found cannabis had "an impressive record" when compared to tobacco, alcohol, or even aspirin.
"Tetrahydrocannabinol is a very safe drug," she said. "Even such apparently innocuous medicines as aspirin and related steroidal anti-inflammatory compunds are not safe."
So if safety is your concern, cannabis is clearly a much better choice than aspirin. If you eat it or vaporize it, it just might be the safest painkiller the world has ever known.

ACCOMPONG MAROON FESTIVAL JANUARY 6 IN JAMAICA
|
The 269th
Accompong Maroon Festival will once again celebrate the legendary
Maroons of Western Jamaica, the historic descendants of runaway slaves,
who were freed by the Spanish and fled to Jamaica’s untouched South
Coast in pursuit of freedom, and who live there to this day.
The Accompany Maroon Festival dates back to the 19th Century and is
celebrated every year in January to mark their victory over the British
and to honour their hero, Cudjoe, who won the first Maroon War. They
commemorate the occasion with traditional singing, dancing, playing of
the drums and blowing of the Aben.
Visitors will also get to partake in
a variety of food and drink at the newly constructed African-styled
Bickle (food) Village. Traditionally the cooking is done by men and no
salt is used.

BARRINGTON LEVY IS FINALLY BACK!
|
Check out No War, the first single issued from his new album. Barrington Levy is finally back!
Ten years after the release of his last album Living Dangerously, Barrington Levy is finally back with a new one! Entitled "It’s About Time," it should be out in 2009.
The New Jersey based Platinum Camp Productions is currently finishing Mr Levy’s new effort. Meanwhile you can check No War, the first single issued from It’s About Time. A far cry from Barrington’s killers produced by the great Henry "Junjo" Lawes in the late 70’s, this new tune inna hip hop style features rap stars Lil Wayne, Busta Rhymes and Kardinal Offishall.
A good production including Levy’s pure vocal style but we hope to find serious reggae tracks on It’s About Time. More information to come...

ORIGINAL ART BY "FLOW" TO CUSTOMIZE YOUR NEXT PROJECT
|
Florencia "Flow" Raynor was born and raised in Mar del Plata, the biggest beach city in Argentina.
She is an Industrial Designer, graduated in 2004 from the Mar del Plata National University, Architecture & Design College.
Flow has an extensive artistic training; her parents encouraged her to take art classes ever since she was a little girl since they noticed she was always experimenting, in need to create. Her favourite art related memory is from when she was just learning how to walk (this is the only thing she can remember from back then), and she would go around with her grandpa collecting little branches and sticks and colourful leaves, which they would use to build "houses". They would spend hours putting it all together, immersed in their own world. Her family say she has always been mysterious and quiet, one never knew what she was doing, but it always had to do with art, and creating, and exploring, and inventing.
Flow comes from an artistic family; her mother spent her youth days dancing ballet, while her father would perform with his folklore band, singing and playing guitar. Flow's older sister is the lead singer and guitar player at a indie rock band, and her younger sister is a photographer, amateur drummer and yoga instructor.
Music and nature have always been a big part of her life; raised in a surf city she spent most of her days at the beach, loving the colours of the sunrise, the sunset, the ocean, absorbing it all. Throughout the years, Flow continued to learn several drawing & painting techniques, learning from some of the most influential artists in the state. Her style is unique, she combines photography, freehand drawing and the most recent computer design tools to create fresh, rich pieces.

SASHAMON FROM HAWAII ON WEST COAST TOUR
Sashamon (sa-sha’-mon) - Maybe because he grew up on Molokai, Sashamon’s music brings a unique peaceful vibe to the island music scene. The public first heard Sashamon’s blend of Reggae and Hawaiian music on a homemade demo, which spread worldwide with the support of top Kauai professional surfers. The popular underground CD 'One Day Maybe' found its way to KWHI 92.7 Hawaiian Rhythms on the Big Island of Hawaii.
With no press kit or label support, “Japanese Squeeze” amazingly became the station’s most requested song and stayed on top for two months. “Japanese Squeeze” was replaced by another Sashamon song “Necta” (Butterfly) and it’s popularity caused Big Island’s KAPA 100.3 and KWXX 94.7 to give airplay as well. Soon “Necta” hit the top of the charts and most requested at Oahu stations including KCCN FM 100, KINE 105.1, KDNN 98.5, as well as the top stations on Maui and Kauai where it continues in heavy rotation to this day! Visit Hawaii and you will surely hear Sashamon on the radio!
And like the love for Hawaii that is everywhere in the world so too is Sashamon’s music, which is now getting airplay in Brazil, Japan, London, Germany, France, Tahiti, Israel & more..
Sashamon’s music has been featured on television as well, including the FUEL network’s Vans Triple Crown of Surfing and 808, and Hawaiian shows such as Hot Hawaiian Nights and Overdrive Live/OC 16 where “Necta” was the #1 most requested video.
The music is in countless surf/extreme sports movies including: Jaime O's ‘Freak Show’ and ‘Freak Show 2,’ legendary film maker Jack McCoy’s ‘Iorana’ about the Tahitian culture (which was featured on Air Tahiti Nui in-flight and Australian TV), Rachelle Ballard’s Sacre Bleu, Volcom’s hilarious ‘Eastside Theory,’ Canadian surf film ‘Shrink,’ Budiasa (Japan) and the snow boarding movie ‘Perspective.’
Sasha was also commissioned to do a song for the ‘Everybody Loves Bob’ compilation tribute to Bob Marley, and "Necta" is featured on Resin Music's ‘Surf Roots 2’ compilation CD benefit for the USA Surf Team and the Surf Roots DVD.
Watch for the new Sashamon album due out Summer 2009.
