CHEF MAYRA'S - MEAT SUBSTITUTES
This is the second of a three-part series because it is my favorite subject: Meat Substitutes

"You don't eat meat? What do you do for protein?!"

Last week I discussed:
TOFU , TEXTURED VEGETABLE OR SOY PROTEIN, TEMPEH
And SEITAN

A copy of last week's Eguide is archived from a link on www.reggaefestivaleguide.com

Now let's discuss other protein sources for us veggies:

BEANS – beans are high in protein, calcium, phosphorus and iron and are an excellent source of dietary fiber

There are many great products that make it easy to replace dairy and eggs.

Soy Milk
I use many of these products for everything from baking, breakfast and cereal, to mini-milk juice boxes that are shelf stable out of the refrigerator. The shelf stable mini-boxes are great for trips!

Edensoy, Westsoy and  Rice Dream <http://www.tastethedream.com/>

Vegan Ice Cream

This is actually the part that scares many vegans away from making the switch. How can one survive without Ice Cream! Fortunately there are tons of great flavors of soy based ice creams to help you get your fix. You may also want to look into Sorbet - many (but not all!) are dairy free and make a nice refreshing summer treat.
Tofutti and Soy Delicious <http://www.turtlemountain.com/>

Vegan Cheese
Vegan cheese is a sticky subject. Faux cheese has come a long long way in the last few years, and you'll probably need to do a little experimenting to find the vegan cheese that tastes best to you. I personally use a different cheese depending on if I am baking, having a sandwich or making pizza.

Speaking of Pizza, many Pizzerias can make a vegan Pizza by just omitting the cheese and piling on every veggie imaginable. Makes an easy dinner.

Tofutti, Vegan Gourmet, and Galaxy Rice Cheese - They even have a Soy Parmesan!

Vegan Butter
You can also replace butter in baking with things like canola or vegetable oil (you may have to experiment; I usually have to use less oil than the butter the recipe called for.

Earth Balance and Fleischman's unsalted margarine.

Vegan Yogurt

I was fan of Yogurt when I was younger, and still have one almost every day as part of my breakfast. There are tons of flavors available - this is an easy switch.

Silk Soy Yogurt, Whole Soy Yogurt  and SO Delicious Soy & Coconut Yogurt.

Vegan Egg Replacers

For vegan baking there are many options - Flax seed oil, Bananas, Tofu, Ener-G Egg Replacer Powder, even Soy Yogurt. Experiment and have fun with it!

For cooking eggs, tofu makes a great replacement for scrambled.   View some of the recipes on the site, get involved with some other local vegans and have some pot lucks.

Experiment converting some of your favorite vegan recipes.

Above all have fun and enjoy yourself

See you back here next week for more ideas on meat substitutes and a good recipe!

COMBINING THE BEST OF MUSIC AND FOOD

Caribbean Paradise Restaurant and Lounge located at 1818 North Charles Street, Baltimore, Md, offers the traditional favorites--jerk chicken, eskovitch fish, oxtail, curry goat, and those delectable fried plantains. The restaurant and lounge consists of three levels and offers the opportunity to hear the old legends (Bob Marley, Gladiators, Burning Spear, Culture, and Meditations). The Livity International Sound System and other reggae bands play live classic reggae (without the vulgarity and lewdness associated with the sordid dancehalls) from 8 p.m. to 2 a.m.

Draped in the rich colours of African cloth, his trademark staff in hand, and his dreadlocks wrapped regally on his head, Anthony B embodies all that it is spiritual and proactive about Reggae music. This artiste has been steadfast in his mission to represent the poor and oppressed, using sharp lyrics to confront political injustices and bring the issues of the people to the forefront. In the process, he has raised the quality of performance standards and lyrical content for the industry, through the release of 13 albums, over 1000 singles and appearances on over 100 albums in the last 14 years.

Anthony B's rich vocals and audacious lyrics carry a depth and substance which is rare in the industry. Internationally, his fan-base has grown because he speaks about the universal concerns of suffering and salvation. "The greatest thing about reggae music is that it's about concepts and ideas," says the artiste, "you are speaking to people on issues they live and can relate to."

Anthony B's latest hit singles include "Sleeping In the Rain", "Satisfaction", "Bad From Long Time", and "Teaser" and come from his highly-anticipated 13th album, "Life Over Death". January 2009, Anthony released yet another album with Greensleeves Records. The new album, "Rise" produced by Frenchy Maximum Sound, continues Anthony's legacy as he proves himself to be one of Reggae's most prolific and engaging artistes, an electrifying performer whose music grips the public social conscience.

TRIBUTE TO WOMEN IN REGGAE!

REGGAE SINGER, HALF PINT READY TO TREAT FANS IN SOUTH FLORIDA AT THE JAMAICA VINTAGE MUSIC FESTIVAL
Born Lindon Roberts, but affectionately called Half Pint, hails from the West Kingston enclave of Rose Lane, a community which has produced the likes of Bob Marley, Dennis Brown, Peter Tosh, Lee "Scratch" Perry, Toots Hibbert and a host of other international Reggae superstars.

Half Pint will be in South Florida this weekend to perform at the Jamaica Vintage Music Festival on Sunday, March 15 at Club Cinema.

Half Pint has enjoyed a long history of hits dating back to the early 1980's. Pint's first single, "Sally," was released followed by "Winsome," "Money Man Skank," "One in a Million," "One Big Family," "Pouchie Lou," the socially conscious "Mr. Landlord," and the all-time dancehall classic "Level the Vibes" and in 1992 "Substitute Lover".

View, a classic of Half Pint performing at Reggae Sunplash in 1992, www.sflcn.com/multimedia.php?id=Hpmf5XCg3Ww

Half Pint

ACCOMPLISHMENTS

In 1998, Half Pint was endowed with one of the greatest honors of his career when he signed with the prestigious BMG Music Publishing Company. To date, he is the only reggae singer to accomplish this feat.

As a man recognized the world over for his positive contribution to the upliftment of mankind through reggae music, Pint was presented with "The Key to The City of Lauderdale Lakes" by the Mayor in 2000.

In 2007 he won two International Reggae and World Music Awards at the Awards held in NYC at the Apollo Theater.

In 2008 Half Pint released his latest album, “No Stress Express” and it is destined to be a classic. The hot tracks include “Unity” featuring Jack Maness from Long Beach Dub All Stars / Sublime, “Bad Boys” featuring Sizzla, “Just be Good” featuring R&B songbird Mikki Howard, ‘Mind Over Matter,” ”Suzie,” and "Children of His Majesty.”

Half Pint is known for his diminutive stature but has huge on-stage presence, often described as no less than explosive and dynamic. Half Pint will be performing live on Sunday, March 15 at the Jamaica Vintage Music Festival at Club Cinema, and promises to be a memorable show.

Also performing live will be Leroy Sibbles, Professor Nuts, Daddy Michigan, Tessane Chin, Lukie D (from the group LUST), David Morrison, JR Evans, Ras Baba all backed by the Code Red Band.

Club Cinema is located at, 3251 N. Federal Hwy. (US1) Pompano Beach, doors open at 7pm and showtime is 8pm.

ON THIS DAY IN REGGAE
March 13
----: Tony Matterhorn is born.
1979: Grenada revolution begins. (National Day)
1998: British ska/reggae star Judge Dread (b. Alex Hughes), best known for his 70's hits "Big Six", "Big Seven" and "Je T'aime", dies after collapsing, apparently from a heart attack, during a performance on stage with his backing band, The Originals, at the Penny Theatre in Cantebury, England, at the age of 53.
The Times reports that his last words were "Let's hear it for the band!"

IN THE NAME OF THE MOST HIGH
Our Father, Who is in heaven, we recognize that You are all Holy and Loving and Merciful, and that we are Your children, and not the subservient, sinful and depraved creatures that false teachers would have us believe.

We are the greatest of Your creations, and the most wonderful of all Your handiworks, and the objects of Your Great Soul's Love and tenderest Care.

Your Will is that we become at-one with You, and partake of Your Great Love, which You have bestowed upon us through Your Mercy and Desire that we become, in truth, Your children through Love, and not through the sacrifice and death of any of Your creatures.

We pray that You will open up our souls to the inflowing of Your Love, and that then will come Your Holy Spirit to bring into our souls this, Your Divine Love, in great abundance, until our souls shall be transformed into the very essence of Yourself; and that there will come to us faith - such faith as will cause us to realize that we are truly Your children, and one with You in very substance, and not in image only.

Let us have such faith as will cause us to know that You are our Father, and the bestower of every good and perfect gift, and that only we, ourselves, can prevent Your Love changing us from the mortal into the immortal.

Let us never cease to realize that Your Love is waiting for each and all of us, and that when we come to You in faith and earnest aspiration, Your Love will never be withholden from us.

Keep us in the shadow of Your Love every hour and moment of our lives, and help us to overcome all temptations of the flesh, and the influence of the powers of evil ones, who so constantly surround us and endeavor to turn our thoughts away from You.

We thank You for Your Love, and the privilege of receiving It, and we believe that You are our Father - the loving Father who smiles upon us in our weakness, and is always ready to help us and take us to Your arms of Love.

We pray thus with all the earnestness and sincere longings of our souls, and trusting in Your Love, give You all the glory and honor and love that our finite souls can give.

Amen
