The conference is a three-day industry forum highlighting the latest trends, best practices, and innovative strategies for establishing pediatric oncology centers of excellence.

Nutrition Corner

Melinda shared several recipes at our support group meeting and we will share with you over the next few months. Sometimes getting kids to eat well during treatment takes ingenuity and creativity. Please share your favorite recipe - for the kids or whole family.

”Banana” Nut Bread

2 cups whole-wheat pastry flour

¾ teaspoon baking soda

¾ teaspoon salt

2 large very ripe bananas

1 cup pureed vegetable (butternut squash, pumpkin, spinach, carrots…….)

1 cup sugar

1/3 cup non fat greek yogurt

2 eggs beaten

1 ½ teaspoon vanilla

 

 optional: Add in ½ cup nuts either chopped or finely ground

 

 Mix first 3 ingredients together

Cream remaining ingredients and fold into dry ingredients

Pour into loaf pans or muffin tins

Bake at 350 for ~20 min for muffins

"Parker's Place is a camp for children and their families who have lost a child to chronic illness or tragedy.  The camp honors the legacy of Parker Brown, a courageous little boy who lost his 6 year battle with cancer in 2009 -- leaving behind 2 brothers and 2 loving parents.

"In their own deep grief, Parker’s family decided to create a place for other families who have experienced such a loss -- to share their experience, find strength, renew their hope and connect with each other."
