Vagus Nerve

The vagus nerve is a big part of our body’s system. It starts in the brain and goes down to your gut. This nerve helps to control many parts of the body, such as heart rate, digestion, and breathing.

 
When it works well, you feel good. But if there are problems with this nerve, you can have health issues.
 
There is too much information on this for the NewsLetter, so if you are interested you might want to check it out.  Also, frequencies associated with this are in HERTZ.  In order to use them with the machine you will need to translate the HZ into KHz.  Just divide the Hertz value by 1000 to get the KHz frequency which is what the machines use.

Egg Salad with Chives

Serves 1
Made one egg at a time for a single serving, this yogurt-and-chive egg salad comes together in a few minutes.
 
Ingredients: 
  • 1 hard-cooked egg, peeled and finely chopped
  • 1 teaspoon finely chopped fresh chives
  • 1 tablespoon whole-milk plain Greek yogurt
  • 1/2 teaspoon Dijon mustard
Method: 
 
In a small bowl, gently stir together egg, chives, yogurt and mustard.   

The mixture will keep refrigerated in an airtight container for up to 3 days. 

(Suggested age: 10 months and up)

Korean-Style Grilled Steak
Korean-Style Grilled Steak
 
 
Serves 4
Brown sugar brings a nice sweetness to this garlicky, gingery marinade for flank steak or flap steak. Serve sliced steak on a bed of shredded cabbage or rice.
 
Ingredients: 
  • 5 tablespoons tamari
  • 1 1/2 tablespoon brown sugar
  • 1 tablespoon toasted sesame oil
  • 1/2 cup chopped green onions, divided
  • 1 clove garlic, finely chopped
  • 1 tablespoon finely chopped fresh ginger
  • 1 1/2 pound flank steak or flap steak
  • 1 tablespoon sesame seeds
  • 1/4 teaspoon ground ginger
Method: 
 
Stir together tamari, brown sugar, sesame oil, 1/4 cup green onions, garlic and fresh ginger until sugar is dissolved. Put the steak in a non-reactive dish and pour the marinade over it. Turn the steak to coat the other side. Refrigerate for 30 minutes. Turn the steak and refrigerate another 30 minutes.

While steak is marinating, toast sesame seeds with ground ginger in a dry skillet over medium heat until lightly golden, 2 to 4 minutes. Remove from heat and set aside in a small bowl to cool. 

Preheat the grill. When hot, oil the grill. Grill the steak 2-3 minutes on each side, or until done to your liking. Transfer the steak to a platter, cover and let rest for a few minutes to redistribute juices. Slice steak thinly against the grain. 

Transfer to a platter. Garnish with sesame seeds and remaining green onions.

Roasted Duck with Pomegranate Glaze
 
 
Serves 8 to 10
Roasted duck is one of the richest, most elegant main courses you can serve at your holiday table. And the tart pomegranate glaze used in this recipe gives the meat a juicy sweetness you won't soon forget.
 
Ingredients: 
  • 3 cups pomegranate juice
  • 1/2 cup sugar
  • 2 (4- to 5-pound) whole ducks, necks and giblets removed
  • 1 lemon, Juice of
  • 2 1/2 teaspoon coarse sea salt
  • 1 teaspoon ground black pepper
  • 2 small white or yellow onions, halved
  • 4 sprigs fresh rosemary
  • Pomegranate seeds for garnish (optional)
Method: 
 
Combine pomegranate juice and sugar in a medium saucepan and bring to a simmer over medium heat. Cook, stirring frequently, until glaze is thick and reduced to about 1 1/4 cups, 45 to 50 minutes, lowering heat as needed to prevent burning. Remove from heat.

Preheat the oven to 450°F. Rub ducks inside and out with lemon juice and sprinkle inside and out with salt and pepper. Place 1 onion and 2 rosemary sprigs in each duck cavity. Tuck wings under backs of ducks and tie legs together with kitchen string. Place on a rack in a large roasting pan. Roast until skin is browned, about 15 minutes.   

Remove pan from oven, lower temperature to 375°F and prick duck skin all over with a fork. Baste ducks with pomegranate glaze and continue roasting, basting with glaze about every 10 minutes. (If a lot of fat accumulates on the bottom of the roasting pan, spoon some of it out during cooking.) Roast until an instant-read thermometer inserted into thickest part of thigh, without touching bone, reads 180°F and into breast reads 170°F, 1 hour to 1 hour and 15 minutes total. Let ducks rest for 10 minutes to allow juices to settle and then baste again.

Carve ducks and transfer to a large serving platter. Garnish with pomegranate seeds, if using. Serve any leftover glaze on the side.

Blue Cheese Walnut Twists

Makes about 40 twists
Buttery puff pastry forms the base for these crunchy twists, perfect for serving as a snack or before a light meal.
 
Ingredients: 
  • 1 (14-ounce) package frozen puff pastry, defrosted
  • All purpose-flour, as needed
  • 3 ounces Roquefort or Blue Gouda, crumbled
  • 2/3 cup ground walnuts
  • 1 tablespoon coarsely ground black pepper
Method: 
 
On a floured surface, roll out puff pastry to a 10x20-inch rectangle. Gently score a line dividing the rectangle in half so you have two 10-inch squares. Sprinkle cheese, walnuts and pepper on one half. Fold over the other half to cover the walnuts and cheese. Turn pastry sideways and roll out again to a 10- by 20-inch rectangle. Place on a baking sheet and let rest in the refrigerator for at least 30 minutes to relax the dough.

Preheat the oven to 375°F. Cut pastry into strips about 1/2-inch wide and 10 inches long. You should have about 40 strips. Working in batches, gently twist each strip and place on a non-stick baking sheet, pressing down ends. Bake until golden brown and cooked through, 20 to 30 minutes. Transfer baked twists to a rack to cool.
