La Bombetta (Bombette) Pugliese!
These delicious rolls of meat! In April, we took a one day cooking class in Puglia, Italy at "Cooking Experience Lecce" and one dish that popped out as something we could implement immediately was Bombetta! We are stuffing thinly sliced pork with imported Capicola and Caciocavallo cheese, then rolling them in parmesan breadcrumb and placing them on a skewer. So easy to cook, simple grill them and you are set. Not in the mood to grill they work great in the sauté pan with a little extra virgin olive oil (which is how we cooked them in our class) or even roasted in the oven. We have a sneaky suspicion that they might become your go to meat this holiday season.
Broccoli Rabe Sausage
With cooler weather back in control, we have been able to find fresh broccoli rabe once again. Therefore, we are so excited to be able to announce that we have begun to make small batches of our broccoli rabe sausage, that has become a huge customer favorite.
So be sure to stop in and grab yours! You also can usually find some conveniently packed in our freezer.

Sfogliatelle (ssfool-ya-dell) is available in our freezer and ready to bake at home!
"Sfogliatelle" —meaning small, thin leaves/layers—is a pastry that resembles stacked leaves. The filling is orange-flavored ricotta cheese, and candied peel of citron.
The Sfogliatella Santa Rosa was created in the monastery of Santa Rosa in Conca dei Marini in the province of Salerno, Italy in the 1600s.
Easy Baking Instructions: Keep frozen until ready to bake. Place frozen sfogliatelli 1 inch apart, bake at 350 for 40-45 minutes. Top with powdered sugar and Enjoy!

As the cooler Autumn weather invades our area, we welcome in deeper and heartier wines. As your cooking changes to heavier and more comfort food styles, so should your wine pairings. We bring you Moris Farms Morellino di Scansano!
Brilliant ruby red color with a fruity & intense bouquet. The mouth feel is full bodied, freshly pleasant and harmonious. Serve with anything, ideal with red meat. Similar to its cousin Chianti, (also comprised of at least 80% Sangiovese in Tuscany,) Morellino’s flavor profile consists mostly of red fruits and berries. It is medium bodied, a lovely berry red in color and soft. While the berry components are persistent, there is a nice spice line of clove or star anise, as well as a hint of herbal quality. Tannins are present but not overtly so—just enough to frame the supple fruit and provide structure. This is a great example of the simple and rustic, yet quality winemaking of Morellino di Scansano and the Tuscan region as a whole.
This is a versatile wine with ease of pairing with many foods in particular first courses and meat, but easily drank as a cocktail to suite your needs. It will pair well with a wide range of foods ranging from roasts, grilled meat and your cheese and cured meat board. Be sure to stop in to get a bottle or two, it is a great pair for your Thanksgiving feast, as well as an every day drinker. You know it won't last long.
(And don't forget - 10% discount for a case of 12 mix and match!)
